Turnip pickled with fish sauce is a dish that is very suitable for the cold winter days at the end of the year. The piece of pickled turnip is crispy, flavorful, attractive, and dispels the boredom of greasy foods, of festive parties.
Prepare the ingredients:
1 kg fresh white turnip
1 clove of garlic
3 chili peppers
100ml fish sauce, depending on the type and saltiness of the sauce, can be adjusted to match the mild taste of the family
150gr yellow sugar or brown sugar for a more beautiful color
3 tablespoons of salt
Step 1: Prepare the ingredients
When buying turnips, choose fresh turnips, firm to the touch, heavy, and even white turnips to avoid being mushy. The turnip leaves must still be fresh.
Cut the turnips into long threads to dry them quickly. Then marinate the turnips with salt for about 1 hour. You should marinate them salty to make the turnips crispy. After marinating, squeeze and rinse the turnips to reduce the saltiness. Dry them in the sun for 1 day to make the turnips crispy again.
Step 2: Cook the fish sauce for pickling the turnips
Pour 250ml of filtered water into a pot, then add 150gr of sugar, 100ml fish sauce, place the pot on the stove and stir with a spoon to boil the fish sauce and dissolve the sugar. Turn off the heat and wait for the fish sauce to cool before pickling the turnips.
Step 3: Pickle the turnips
Put the dried turnips into a glass jar, a porcelain jar. Then add the pickling water along with sliced chili and garlic. Pour the cooked fish sauce into the jar so that the turnips are submerged, avoid letting the turnips float on the water’s surface, which will cause the foam to float. Pickle the turnips for 2-3 days before eating. If you like it sour quickly, you can add white vinegar to the pickling mixture.
Turnip pickled can be eaten with white rice, served with banh chung (sticky rice cake), xoi nep (sticky rice), to prevent boredom. If you eat it immediately and don’t store it for long, you should add a moderate amount of salt so that it is not too salty and can be suitable for relieving boredom during the Lunar New Year.
You can also use dried turnips to make this dish. The process is similar, but dried turnips need to be soaked in water, rinsed, and remove the tops. However, the taste of dried turnips will be slightly darker than fresh turnips, so depending on the family’s taste, choose the type of turnip to pickle.
