Milk and eggs are two nutritious foods rich in calcium for children. But drinking milk or eating boiled eggs, fried eggs, or fried eggs sometimes becomes pressure for children. Therefore, you should follow the following recipe, which saves time, makes your child more excited, and can create an additional meal, snack, or breakfast for your child.

Steamed eggs with fresh milk, smooth and soft

Ingredients:

250ml fresh milk

2 eggs

1 tablespoon sugar. If there is sugar in the milk, do not add sugar. In the case that your child is used to eating less sweet, you can add less sugar. Eating less sugar is better for your child’s health.

Instructions

You beat eggs and milk, sugar in a bowl and use a fork or whisk to beat evenly. Remember to beat in one direction for an even mixture. Then strain the mixture through a strainer to remove large particles. Then pour the mixture into a bowl, a cup of milk, and steam it in a water bath.

After about 10-15 minutes, the mixture will be cooked. You can use a toothpick to check if it is cooked by poking it. If it is cooked, it will not stick to the toothpick.

This steamed egg dish should not be steamed too well, or it will become dry. The steamed eggs are soft, smooth, delicious, and easy for children to eat.

Steamed caramel eggs

This dish is also called flan or caramel pudding. With this method, you can change the flavor according to your preference to make your child eat more without getting bored.

Ingredients

– 5 eggs (separate egg yolks and egg whites because not all egg whites will be used)

– 500ml sweet milk

– 100g sugar

– 1/2 lime juice

– 1-2 vanilla extracts

– 100ml filtered water

– Cocoa powder, green tea, coffee, pandan syrup, fruit syrup (depending on your preference if you want to change the flavor for your child)

– Tools: spoon, whisk, pot, steaming mold

Step 1: Turn sugar into caramel

Put 80g of sugar and about 30ml of water into a small pot/pan and heat evenly until it turns a amber color. You only need to let the sugar turn an amber color and fragrant, avoid heating it too much, which can result in a darker color and a strong burnt smell. Add a few drops of lime juice to prevent the sugar from clumping.

Then quickly pour this layer of caramel into cups, steaming bowls. If the steaming bowl holds 75ml, you only need a few drops of caramel in one bowl, too much caramel will make it too sweet.

Step 2: Make the egg-and-milk mixture

Put 5 egg yolks and 2 egg whites into a bowl. Do not use all the egg whites because if you add too many egg whites, the cake will be stiff. Add milk and sugar to the eggs and beat until well combined. Avoid beating vigorously to prevent air bubbles. Then strain the mixture through a strainer to avoid lumps.

In one steaming batch, you can make multiple flavors for your child. First, pour the mixture into cups. For flavors you want to change, you can add a little pandan essence to create pandan flavor, or add a little cocoa powder to the mixture to create a cocoa flavor, or add fruit syrup and mix it evenly to create a fruity flavor…

Pour the mixture into cups, steaming bowls, but remember not to fill them up. Then cover the lid and put them in a steamer with a water bath.

Step 3: Steam the cake

Place the containers in a steamer. Steam for about 20 minutes until the cakes are cooked. Use a toothpick to poke them, and if the toothpick comes out clean, it means the cakes are cooked.

Note that caramel pudding can be eaten immediately or you can keep it in the refrigerator to eat it cold. This caramel pudding can also be served with sweet soup or sauce.

You can make a sauce by mixing unsweetened condensed milk with fresh milk and filtered water, add a little cocoa powder or coffee and whisk until well combined, then pour it onto the caramel pudding and serve it with ice. The thickness of the sauce depends on your preference, whether you want it thick or thin, sweet or less sweet, adjust it according to your family’s taste.
