Making corn milk after steaming ripe corn
Prepare ingredients
Depending on the number of family members, you can refer to the following recipe: 2 young yellow corn, 1 pack of unsweetened fresh milk 220ml. You can use sticky corn but the sticky corn milk will be white in color.
125ml sweetened condensed milk
1l of water
1/2 teaspoon of salt
1 vanilla tube if desired
Step 1: Boil the corn
Peel off the old corn husks and rinse. Put the corn and the inner husk into the pot to boil with the corn silk. Do not remove all the husks of the corn but keep a layer of corn husk when boiling to preserve the aroma and sweetness of the corn. Put 1 liter of water to boil the corn for about 10 minutes until the corn is cooked. Boil the water and simmer gently to prevent the fire from being too strong so that the corn is just cooked without being mushy.
When buying young corn, keep the husk, corn husk, and corn silk to boil to help create a fragrant aroma and increase the sweetness of the corn so that the milk will taste better.
Take out the cooked corn to cool down and then remove the kernels using a knife.
Step 2: Blend the corn milk
Blend the cooked corn kernels until smooth, add the corn cooking water to make the milk sweeter, and blend with fresh milk and condensed milk. Pass the mixture through a sieve to remove the residue.
Since the corn is already cooked, you can drink it right away after blending. If you prefer it to be safer, you can put it in a pot and reheat it, but only simmer over low heat, stir to dissolve the milk evenly, and avoid boiling too much, otherwise, the milk will overflow and the sugar in the milk will cause sediment to stick to the bottom of the pot. Keep stirring to prevent burning at the bottom and stir in one direction so that the corn milk does not separate.
How to make corn milk from raw corn
Ingredients needed:
2 young corn
1 liter of filtered water
1 pack of unsweetened milk
125ml sweetened condensed milk
1/2 teaspoon of salt
Vanilla if desired
Step 1: Prepare the corn
Buy corn and remove the husk and silk. Then rinse. Boil the corn husk, silk, and corn core after removing the kernels. Use that water to blend with the corn to make the corn milk more flavorful. You can also use that water to make corn tea to drink immediately.
Use a knife to slice off the corn kernels. Put the corn in a blender with filtered water.
Strain the mixture through a sieve to make it smooth.
Step 2: Cook the corn milk
Put the corn mixture and milk into a saucepan and cook over medium heat until the milk is boiling. Boil the corn milk at medium heat. You can stir for about 5-7 minutes, need to maintain the proper heat and stir evenly to avoid separation of water. You can use a microwave or electric stove to boil. Turn off the heat and let the corn milk mixture cool.
Note when making corn milk
If you prefer pure vegetarian corn milk without using cow’s milk or condensed milk, you can remove the milk and add coconut pulp to blend together to create the aroma of coconut corn milk. Or you can make pure fresh corn milk with a little brown sugar or without adding sugar.
You should add a pinch of salt to make the milk more flavorful and avoid separation of water.
