The coconut fruit is primarily found in the provinces of Central and Northern Vietnam. It is derived from the oil palm tree species, characterized by its thick and tall trunk adorned with thorns. During late October to early November each year, the coconut fruit ripens, transforming its outer skin into a dark green and shiny brown hue. Encased within a thick husk lies the delicious and oily flesh of the coconut.

Local farmers utilize long sticks attached to bamboo poles to pick the coconuts, ensuring their freshness and preserving their delectable taste. The finest coconuts are typically harvested from old, untrimmed trees that are tall and challenging to reach.

According to local tradition, coconut fruit possesses a slightly bitter taste, which is enhanced through ripening, resulting in a richer, sweeter, and creamier flavor. After being harvested, the coconuts are washed and combined with pieces of old coconut husk to remove the outer skin. Subsequently, boiling water at approximately 85-90 degrees Celsius is poured into the coconut shell and stewed for 15-20 minutes until the coconut meat becomes tender.

If the water temperature is too high, the coconut will shrink, become hard, and impart a bitter taste. Conversely, overcooking the fruit will cause it to turn mushy and lose its characteristic creamy texture. Therefore, the cooking process requires great skill and precision to achieve delicious coconuts.

2. The Price of Coconut Fruit

Coconut fruit is available in two types: sticky coconut and regular coconut. While they share a similar taste, the difference lies in the softness and stickiness of the flesh. Sticky coconut, being sweeter and creamier, commands a price range of approximately 100,000 to 110,000 VND per kilogram.

On the other hand, regular coconut is priced at around 60,000 to 65,000 VND per kilogram. Some vendors also offer ripened coconuts at an additional cost of 5,000 VND per kilogram.
