- 1kg clams
- 100g rice
- Red onion, garlic, scallions, green onion
- Seasonings: cooking oil, fish sauce, seasoning powder, MSG, oyster sauce, salt, sugar, pepper
How to Make Clam Porridge
Step 1: Prepare the Ingredients
Soak the clams in salt water with a few slices of chili pepper for about 2 hours to help them expel sand.
Chop the red onion and garlic finely. Wash the scallions and green onions, then cut the roots into sections and chop the remaining parts finely.

Step 2: Cook the Porridge
Place an empty pot on the stove and wait until it is hot. Add the rice and stir continuously until it turns golden brown. This step adds a nice aroma to the porridge and prevents the rice from overcooking and becoming mushy.
Transfer the browned rice to a pot of water and cook for approximately 45 minutes, or until the rice grains are soft and puffed. Adjust the water quantity according to your preferred consistency.

Step 3: Boil the Clams
While the porridge is cooking, boil the clams separately to extract their meat. Place the cleaned clams in a pot, add water, and cook until their shells open wide, indicating doneness. Remove the clams from the broth and set them aside to cool before removing the meat and discarding the shells.

Retain the clam broth and let it rest for about 15 minutes to allow the sediment to settle at the bottom. Then, add this flavorful broth to the porridge for extra taste.
When adding the clam broth to the porridge, pour it gently to avoid disturbing the settled sediment. Stir gently a few times, cover, and continue cooking.
Step 4: Sauté and Finish the Clam Porridge
Heat some cooking oil in a pan and sauté the garlic and onion until fragrant and slightly browned. Add the clams and stir thoroughly.
As the clam meat tightens, season with 1 tablespoon of fish sauce, 2 teaspoons of seasoning powder, 1 teaspoon each of oyster sauce, salt, and sugar, and finally, 1/2 teaspoon of MSG. Mix well to ensure the seasonings are evenly distributed.

Turn off the heat and transfer the seasoned clams to the porridge pot. Stir well, bring it to a boil, and adjust the seasoning to your taste.
Just before serving, add the scallions and green onions.
Final Product

Your clam porridge is now ready to be served. Garnish with some pepper and fried onions if desired. This dish is best enjoyed hot.
