Step 1: Prepare the ingredients

– 4 cups of low-fat or non-fat milk.

– 1/4 cup of low-fat or non-fat yogurt.

– A heat-resistant container with 5 – 8 cups capacity, with a lid, fine mesh strainer, and thin fabric.

Step 2: Cook the milk

You pour the milk into a pot and then put it on the stove to heat and stir well, stirring frequently until the milk evaporates, almost foams, then stir until it cools a little. Note that you should not use too high heat as it will burn the bottom of the pot.

Step 3: Transfer the milk to the container

Pour the yogurt into the warm milk mixture and stir well. Carefully pour the mixture into clean cups and then transfer them to the container.

Step 4: Incubate the yogurt

You cover the container with a lid and wrap it in a clean cloth to keep it warm for fermentation. Place it in a draft-free place and let it sit undisturbed until the yogurt thickens and has a pleasant aroma. The incubation time is at least 8 hours and up to 12 hours.

Step 5: Strain the yogurt

You use a fine mesh strainer and a thin fabric. Then pour the Greek yogurt onto the fabric and place it in the refrigerator for 8 to 24 hours for the water to separate from the mixture and flow down below the bowl (this is called the water separation step for Greek yogurt). When the Greek yogurt is firm and smooth, it is successful. Store the yogurt in a lidded container for up to 1 week.
