After 24 hours of soaking, use a knife to cut a line from the stem to the tail of the taffy, following the guide line on the taffy. Then, easily remove the taffy skin along the cut line without touching the taffy meat.

Note:

– Add just enough water to soak the taffy, neither too much nor too little.

– After 24 hours, check if the taffy skin peels off easily with your hand. If not, continue soaking for another 3-4 hours.

– Avoid soaking the taffy in excessively hot water, as it can make the taffy soft and harder to peel off.

Start by bringing a pot of boiling water, enough to cover all the taffy. Add ½ cup of rock salt to the pot and stir well over high heat to dissolve the salt quickly.

Once the salt is completely dissolved and the water is boiling, briefly blanch the taffy by flipping it for about 1 minute and then remove it from the pot. Peel off the taffy skin using your hand. If it peels off easily, it’s done.

After blanching, place the taffy in a cold water bath for 3-5 minutes to cool it down. Then, soak the taffy in a diluted saltwater mixture for another 3-5 minutes. Use a knife to cut along the guide line on the taffy and slowly remove the skin.
