– Bottle gourd: 1 fruit

– Eggs: 2

Instructions

– Peel and wash the bottle gourd, then cut it into bite-sized pieces.

– Rinse the seafood mushrooms, cut them into small pieces or leave them whole depending on your preference. Wash the spring onions and chop them finely. Wash the ginger and finely chop it.

– Crack the eggs into a bowl, add a pinch of salt and cooking wine, and beat until well combined.

– Heat cooking oil in a pan, pour the beaten eggs in and fry until the eggs solidify. Use a wooden spatula to break the eggs into small pieces, then transfer them to a plate.

– Use the remaining oil in the pan, add the chopped ginger and stir-fry until fragrant. Then, add the mushrooms and stir-fry for a while before adding the bottle gourd. Stir-fry until the bottle gourd becomes soft.

– Pour in enough boiling water to make a soup. Once the water is boiling, add the eggs and season with salt to taste.

– Add a few drops of sesame oil, stir well, and turn off the heat. Transfer the bottle gourd and egg soup to a bowl, sprinkle with finely chopped spring onions on top.
