Pig liver soup

Ingredients

– Chinese cabbage: 1 handful

– Pig liver: 250g

– Chicken egg: 1

– Salt

– Cooking wine: half a tablespoon

Instructions

– Pick the roots of Chinese cabbage, wash them thoroughly. If you want, you can keep the cabbage roots. Boil a pot of water, blanch the Chinese cabbage, then scoop it out and drain the water.

– Soak the pig liver in water for 20 minutes to remove excess blood. After this time, take out the liver, slice it thin, wash it again and drain the water.

– Marinate the liver with a little salt and cooking wine for 10 minutes.

– Beat the egg into a bowl, beat well.

– Add enough water to the pot to cook the soup. When the water boils, add the liver to the pot. Add it one by one to avoid pouring the entire bowl of liver into the pot, which will make the excess blood in the bowl spill into the soup, making it taste bitter.

– When the pig liver changes color, slowly pour the beaten egg into the pot, stir with chopsticks, and wait for the egg to solidify.

– At this point, add the Chinese cabbage, cook for a while.

– Add salt to taste, stir well and turn off the heat.
