– Add in the star anise, dried tangerine peel, white part of green onion, ginger, and cinnamon. Stir a few times.

– Then pour in boiling water, the amount of water should be enough to cover the pork tails, add light soy sauce, dark soy sauce, and salt to taste. Adding soy sauce and dark soy sauce helps the dish have a beautiful color and a delicious aroma.

– Reduce the heat to medium-low and simmer for about 1 hour. Stir occasionally to prevent sticking to the bottom of the pot. Braise until you can easily skewer the meat of the pork tail with a chopstick and the meat is tender.

At this time, turn the heat back to high to reduce the braising liquid. Taste and adjust the seasoning to your liking, then turn off the heat.
