Pork Rib Soup: A Perfect Balance of Sour and Sweet
Ingredients for Pork Rib Soup:
– 500g pork ribs
– 2 tomatoes
– 1 onion
– Scallions
– Coriander/cilantro
– 2 tbsp rice vinegar
– 2 tbsp fish sauce
– 1 tsp vegetable oil
– A pinch of salt

Step 1: Prepare the Pork Ribs
Rinse the ribs with water to remove any dirt. Boil some water with a pinch of salt and briefly dip the ribs into the boiling water to remove any impurities. Rinse the ribs again and set them aside to drain. Marinate the ribs with 2 tbsp of seasoning sauce for about 30 minutes to absorb the flavors.
Step 2: Prepare the Other Ingredients
While the ribs are marinating, wash the tomatoes and remove the stems. Cut them into wedge-shaped pieces. Peel and cut the onion into wedges as well. Rinse and finely chop the scallions and coriander/cilantro.

Step 3: Cook the Soup
Heat a pot with 1 tsp of vegetable oil. Add the onion and sauté until fragrant. Toss in the tomatoes and cook until they soften. Add the marinated ribs and stir-fry until they turn opaque, ensuring they absorb the flavors. Pour in about 500ml of water and bring it to a boil. Reduce the heat and simmer for about 15 minutes to tenderize the ribs. Skim off any foam that rises to the surface for a clearer broth.
Once the ribs are tender, season the soup with 2 tbsp of rice vinegar. When the soup boils again, add 2 tbsp of fish sauce.
Step 4: Serve
