500g pork belly
4-5 eggs

2 tablespoons fish sauce

How to Cook Braised Pork Belly and Eggs
Step 1: Prepare the ingredients
Pork belly: Wash and cut into bite-sized cubes (approximately 3-4cm). Blanch the meat in boiling water for about 2 minutes to remove any impurities and excess fat. Then, rinse it under cold water.
Eggs: Hard-boil the eggs (about 8 minutes for chicken eggs and 5 minutes for quail eggs). Peel and set aside.
Shallot and garlic: Peel and mince.
Step 2: Marinate the pork
In a bowl, combine the pork with 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1/2 teaspoon of pepper, minced shallot, and garlic. Mix well and let it marinate for about 15-20 minutes to allow the flavors to absorb into the meat.

Once the pork is tender and the sauce has thickened, turn off the heat. Sprinkle some chopped scallions on top for garnish. Serve the braised pork and eggs hot with steamed rice and pickled vegetables for a complete meal.
