High temperatures can cause seasonings to break down and make the broth sour. It is best to season the broth after cooking, when using it as a base for soups or other dishes.

If your broth turns cloudy, use an egg white. Whisk it into the broth, then bring it to a boil. This simple trick helps the egg white bind to the cloudy particles. Use a strainer to remove the cloudy substance, and your broth will become clear again.
