Look for a piece of meat that has a bright red color with some white marbling and yellow fat. The meat should be soft, with small, slightly uneven grains. When pressed lightly, good beef should spring back with some elasticity and not feel sticky. Avoid meat that is dark red or greenish, with pale fat and white spots, and feels slimy to the touch.

**How to Cook Delicious Seaweed Soup**

Step 1: Prepare the Ingredients

Rinse the beef once and rub it with a tablespoon of salt for a minute to remove any unpleasant odors. Rinse it again thoroughly. Chop the beef finely and place it in a bowl. Add half a teaspoon each of salt, seasoning, and pepper. Mix well and let it marinate for 15 minutes to absorb the flavors.

Clean the spring onion and slice it thinly. Cut the seaweed into bite-sized pieces. Wash the mushrooms with diluted salt water and then again with plain water. Cut the mushrooms into quarters lengthwise.

Step 2: Cook the Soup

Heat a tablespoon of oil in a pot and add the marinated beef. Stir-fry until it changes color, then add the mushrooms and cook for about 3 minutes. Pour in 500ml of water and bring it to a boil.

Once it boils, season with half a teaspoon each of salt and seasoning. Stir well to dissolve the seasonings, then add the seaweed.

When the soup boils again, add a teaspoon of fish sauce and adjust the seasoning to your taste. Finally, add the spring onion and stir. Turn off the heat.

Step 3: Serve

The soup is ready! The beef provides a sweet flavor, while the chicken mushrooms add their characteristic soft, buttery texture. The seaweed is chewy and full of umami.

This nutritious and delicious soup is best served hot with plain white rice.
