Rinse the spare ribs with salted water to eliminate any unpleasant odors or tastes, ensuring the meat is clean. Afterward, transfer the ribs to a bowl and marinate them with two tablespoons each of seasoning powder and cooking oil, mixing thoroughly.

In a pot, bring 500ml of water to a boil and add the marinated spare ribs. Skim off any foam that forms to ensure a clearer broth. Reduce the heat and simmer the ribs for about 10 minutes.

In a separate pan, heat up 200ml of oil. Add the sliced shallots and scallion roots, followed by the pineapple and tomato wedges. Sauté for approximately 2 minutes before turning off the heat.

Finally, pour the stir-fried mixture into the rib broth and give it a good stir. Bring the soup to a boil again, then season with one tablespoon of salt, two tablespoons each of sugar and seasoning powder, and one tablespoon of fish sauce. Turn off the heat and sprinkle in the chopped scallions and coriander.
