500g spare ribs (choose ribs with less fat and more meat)

300g pickled vegetables (rinsed to reduce saltiness)

2 tomatoes (approx. 200g, ripe and red)

3 shallots

3 cloves garlic

A handful of scallions and cilantro (for garnish)

Seasonings: salt, sugar, fish sauce, pepper, cooking oil

Water: about 1 liter

Tomatoes: Wash and cut into wedges.

Shallots and garlic: Peel and mince.

Marinate the spare ribs with 1 teaspoon of salt, 1 teaspoon of fish sauce, 1/2 teaspoon of pepper, and 1 teaspoon of minced shallots for 15-20 minutes to allow the flavors to absorb.

Step 3: Sauté the Ingredients

Heat 2 tablespoons of cooking oil in a pot. Add the minced shallots and garlic, sauté until fragrant. Put the marinated spare ribs into the pot and stir-fry until they change color slightly. Add the tomatoes and continue stirring for about 2 minutes until the tomatoes soften and release their color.

Give it a final taste and adjust the seasoning if needed. Turn off the heat. Sprinkle with chopped scallions, cilantro, and a pinch of pepper for extra flavor. Ladle the soup into bowls and serve hot with steamed rice.
