How to Make Watermelon Rind Salad

- Peel away the green outer layer of the watermelon rind, cut into strips about 5cm long, and then slice thinly to desired thickness. Peel and wash the carrot, and slice thinly as well. Finely chop the garlic and chilies.
- In a bowl, add about 0.3ml of boiled cooled water.
- Mix in salt, sugar, and vinegar, stirring until dissolved. Wash the herbs and tomato, and chop finely.
- Combine the carrot and watermelon rind, rinsing them together.
- Sprinkle 1/2 teaspoon of salt into the water and soak for about 15 minutes. Once the rind is softened, rinse again with clean water and gently squeeze to remove excess salt.
- Toss the seasoned rind with the prepared dressing, allowing it to marinate for 15-20 minutes. Then, add in the chopped herbs.
- Toss well to coat the ingredients with the dressing before plating.
- Sprinkle roasted peanuts over the salad and serve with lettuce and tomato.
