How to Make Delicious, Non-Fishy Steamed Squid

Step 1: Prepare the Squid

Soak the squid in diluted saltwater with a splash of vinegar for a few minutes, then rinse and drain. Squid and seafood, in general, are naturally salty, so you can choose to season or not when steaming, according to your taste. If you wish to season, add a pinch of salt, fish sauce, seasoning powder, pepper, and white wine to remove any fishiness.

Step 2: Prepare the Accompanying Ingredients

For the accompanying ingredients, slice a portion of the ginger, and shred the remaining portion. Cut the onion into wedges, and the scallions into sections. Rinse and cut the parsley into sections. These ingredients not only enhance the flavor but also effectively remove any fishiness from the squid when steamed or boiled. Depending on regional preferences, the steaming seasonings may vary. Besides the commonly used ginger and scallions, there are also options like lemongrass, piper sarmentosum (a type of betel leaf), and green banana leaves.

Step 3: Steam the Squid

Arrange the sliced ginger on a steaming rack and place the squid eggs on top. Bring water to a boil and steam the squid for about 5-6 minutes, depending on their size, until they are cooked. Add the onion, scallions, parsley, and shredded ginger. Cover and steam for a few more seconds. Turn off the heat and transfer the squid to a plate.

Step 4: The Final Product

The perfectly steamed squid should be crisp and sweet, with intact skin and heads. It is best enjoyed hot rather than cold.
