Ingredients for Chicken Somen Noodle Salad:
– 200gr chicken thigh/breast
– Vegetables: Carrots, onions, lettuce, herbs, or any other vegetables of your choice
– 50gr dried somen noodles or regular somen noodles
– Dried shallots, roasted peanuts
– Seasonings: Soy sauce/dark soy sauce, chili sauce, vinegar, oyster sauce, sesame oil, honey, white/dietary sugar, pepper. Adjust seasonings to your taste.
Instructions
Step 1:
Rinse the chicken thoroughly and pat dry. Marinate the chicken with 2 teaspoons of honey, a pinch of salt, and pepper for 7 minutes to absorb the flavors.
Step 2:
Prepare the vegetables by washing and shredding or thinly slicing them for easy mixing with the noodles. You can choose vegetables according to your preference.
If using dried somen noodles, briefly blanch them in water to soften, then drain thoroughly.
Step 3:
Place the chicken in a pan and grill both sides. Cover the pan while grilling to keep the chicken moist without using any cooking oil.
Step 4:
In a bowl, combine 1 tablespoon of soy sauce/dark soy sauce, 1 tablespoon of vinegar, 1 tablespoon of chili sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sesame oil, 1 tablespoon of roasted sesame seeds, 1 tablespoon of sugar/dietary sugar, and 3 tablespoons of water. Stir well and heat the mixture on the stove until bubbles form around the edges of the pan.
Place the noodles in a bowl and top with the grilled chicken and prepared vegetables. Finally, pour the sauce over and mix well before serving. You can sprinkle some roasted peanuts on top to enhance the flavor.
