- 1 whole chicken, approximately 1.5 kg
- 500g puffed sticky rice
- 50g shallots, minced
- 50g garlic, minced
- 50g spring onion, minced
- 100g char siu sauce
- Seasonings: salt, sugar, pepper, soy sauce, honey

2 How to Make Grilled Char Siu Chicken
Step 1 Prepare the Chicken
Purchase a whole chicken that has already been cleaned and dressed. Rinse it thoroughly under running water with salt to remove any impurities. You can use sliced ginger to rub on the chicken to eliminate any unpleasant odors. Rinse the chicken again and set it aside to drain.
Preparing the Chicken
Step 2 Marinate the Chicken
In a blender or food processor, combine the following ingredients: 50g minced shallots, 50g minced garlic, 50g minced spring onion, 2 teaspoons of seasoning powder, 2 teaspoons of sesame oil, 50ml of cooking oil, 4 teaspoons of soy sauce, 4 teaspoons of honey, 2 teaspoons of dark soy sauce, and 100g of char siu sauce. Blend until you have a smooth paste.
Next, use a skewer to prick holes all over the chicken. This will help the marinade penetrate the meat. Rub the marinade all over the chicken and let it sit for about 20 minutes to absorb the flavors.

Step 3 Grill the Chicken
Place the marinated chicken on a grill over medium heat and cook for 45-60 minutes, turning occasionally, until the chicken is cooked through and the skin is golden and crispy. Baste the chicken with the remaining marinade during cooking to keep it moist and flavorful.
If you don’t have a charcoal grill, you can use an oven or an air fryer to cook the chicken.

Step 4 Fry the Sticky Rice
Heat oil in a pan over medium heat. Once the oil is hot, carefully add the sticky rice rings and fry until they are golden and crispy. Remove from the oil and drain on a paper towel.
