2 How to Make Taiwanese Ramen
Step 1 Prepare the Ingredients
Wash and chop the green onions, discarding the roots. Cut the garlic chives, removing the roots, and blanch them along with the bean sprouts in boiling water. Soft-boil the eggs for about 5 minutes, then immerse them in cold water and peel.
Next, make the ramen sauce by mixing 20g tahini, 1 tablespoon soy sauce, and 1 tablespoon chili oil. Whisk until well combined.
If you can’t find tahini sauce, you can make your own by grinding 18g roasted sesame seeds and then adding 6g cooking oil, 1 tablespoon soy sauce, and 1 tablespoon chili oil. Whisk until smooth.
In a separate pot, boil water and cook the ramen noodles until just al dente. Rinse the noodles with cold water to give them a chewier texture.
