Preparation:
– 2kg fresh lotus seeds
– Nếp leaves.
Instructions:
After removing the shells and cores, thoroughly rinse the lotus seeds. Clean and cut the nếp leaves into sections. Prepare for steaming.
If you have a steam fryer, place the lotus seeds in the tray and top them with some nếp leaves.
Then, put the tray into the fryer and steam at 100 degrees Celsius for 15 minutes until the seeds are perfectly cooked.
If you don’t have a steam fryer, you can steam the seeds in a regular pot over high heat for about 15 minutes, ensuring they don’t overcook.
Steaming the lotus seeds helps preserve them for up to a year without turning black or hardening.
Once steamed, immediately soak the seeds in a pot of boiled and cooled water for about 5 minutes.
After 5 minutes, drain the seeds and let them air dry.
Now, portion the seeds into small bags or containers and freeze them. Stored this way, your lotus seeds will remain golden and tasty for up to a year without hardening or turning black.
