How to Cook Pork Rib and Lotus Root Soup

Step 1: Prepare and marinate the pork ribs

To get rid of any unpleasant smell and clean the ribs, soak them in diluted salt water for about 5 minutes, then rinse them twice and set them aside to dry.

Cut the ribs into bite-sized pieces, about 2 finger widths each. Peel and chop the shallots.

Marinate the ribs with half of the chopped shallots, 2 teaspoons of seasoning powder, 1 teaspoon of pepper, and 2 teaspoons of fish sauce. Mix well and let it sit for 15 minutes to absorb the flavors.

You can rub the ribs with shallots, ginger, or lemon to effectively remove any unwanted smell. Soaking the ribs in water mixed with white wine is also a great way to get rid of the odor.
