How to marinate traditional grilled pork
Common ingredients
Pork shoulder: 500g
Pork belly: 500g
Purple onion: 1 bulb
Dried garlic: 1 bulb
Green onion: 3 stalks
Honey: 1 tablespoon
Seasonings: salt, sugar, broth powder, fish sauce, pepper, cooking oil, sesame oil, chili sauce
Prepare the ingredients
Peel and mince the garlic.
Rinse the 500g of pork shoulder with diluted salt water, then rinse again and let it dry. Cut the pork into medium-sized pieces. Use a hammer to tenderize the meat.
Marination
Put the pork in a large bowl, add 1 tablespoon of broth powder, 1 tablespoon of sugar, 1 tablespoon of tasty fish sauce, 1 tablespoon of honey, 1 tablespoon of sesame oil, 1 tablespoon of cooking oil, 1 tablespoon of minced garlic, ½ tablespoon of pepper. Mix everything well and marinate for about 3 hours to let the meat absorb the flavors. It’s recommended to wear gloves and massage the meat to help it absorb the flavors better.
How to marinate BBQ grilled pork
Prepare the ingredients
Peel and mince the garlic and ginger. Mix 1 tablespoon of cornstarch with 50ml of water until there are no lumps. Then, dissolve 3 tablespoons of brown sugar in 50ml of boiling water in a small pot.
Rinse the 500g of pork belly with diluted salt water, then rinse again and let it dry. Cut the pork into slightly larger and thicker pieces.
Marination
Gradually add the following ingredients to the pot of dissolved brown sugar: 2 tablespoons of soy sauce, 1.5 tablespoons of Korean chili sauce, ½ teaspoon of ground black pepper, 1 tablespoon of sesame oil, 1 tablespoon of minced ginger and garlic. Stir everything well.
Place the pot of seasoning mixture on medium-high heat and simmer until it boils, then reduce the heat. Gently stir the cornstarch water mixture and pour it into the pot. Continue cooking on medium heat until the mixture thickens, then turn off the heat and let it cool. After that, marinate the prepped pork with the BBQ seasoning mixture for about 3 – 4 hours.
Once marinated, you can skewer the meat or leave it in larger pieces and grill it on charcoal or gas stove for delicious BBQ. Additionally, you can prepare some vegetables and dipping sauce to complete the barbecue feast.
