Many reputable health organizations around the world have conducted research, evaluation, and concluded that MSG is a safe ingredient in food processing. However, MSG can transform into harmful substances at a temperature of 300 degrees Celsius, while the normal cooking temperature reaches only about 260 degrees Celsius.
Many people who consume food with a high amount of MSG may experience dizziness, dry mouth, nausea… This condition is called “MSG syndrome” which occurs when the body is sensitive to monosodium glutamate (MSG).
MSG syndrome can last for a few minutes to an hour. Therefore, those who are sensitive to monosodium glutamate should not consume MSG.
Seasoning Powder
Seasoning powder contains various ingredients, including flavor enhancers 627 and 631 (also known as super flavor enhancers that are 10-15 times sweeter than regular seasoning powder).

These flavor enhancers provide sweetness to the seasoning powder and do not come from “bone broth and meat” as commonly advertised. There may also be some ingredients from bone broth, shrimp powder, chicken powder, mushroom powder… but in very small amounts, only less than 5%. Therefore, seasoning powder cannot replace nutritional products.
All three flavor enhancers, 621, 627, and 631, are allowed to be used in food. However, excessive consumption can also cause unpredictable side effects on health.
Which is better for health, seasoning powder or MSG?

Both MSG and seasoning powder are approved for use by the International Food Standards Commission, so they are safe for human consumption if used in moderation. Depending on personal habits and preferences, you can choose to use seasoning powder or MSG. But regardless of the type used, consumers should choose products with clear labels and origins.
When using MSG, it is important to note that if you marinate your grilled dishes, you should cook them at a temperature below 250 degrees Celsius, avoiding high heat that can transform MSG into harmful substances for the body.
