Instructions:

Coat the mangosteen flesh with sugar, if using, and cook over low heat until the sugar melts and coats the fruit. This step is optional but helps to preserve the fruit and enhances its sweetness.

If you plan to serve the dessert on the same day, you can skip the sugar coating step. Simply peel and deseed the mangosteen, then proceed to the next step.

Soak the gelatin in 100ml of room-temperature water for 15 minutes until it blooms and absorbs the water. Then, drain and squeeze out any excess liquid.

In a saucepan, combine the fresh milk, whipping cream, and condensed milk. Stir well and heat over low heat until the mixture reaches approximately 80 degrees Celsius. Add the drained gelatin and stir until it has completely dissolved.

Allow the dessert to cool to room temperature, then refrigerate for at least 1-2 hours until set. This dessert is best served chilled, and it can be stored in the fridge for up to 2 days.
