Tips for Using Tofu
There are four main types of tofu based on their softness: silken tofu (1), soft tofu (2), slightly firm tofu (3), and firm tofu (4). The softness of tofu increases from 1 to 4.
Reducing Water Content in Tofu
– This method helps tofu absorb more flavor from spices and condiments. As a result, the tofu will taste richer and more delicious, and won’t be as bland as plain tofu. Note that this method only applies to slightly firm and firm tofu, with a firmness level of 3 – 4.
– There are three methods to reduce the water content in tofu: using pressure, cold temperatures, and heat.
– For the pressure method, cut the tofu into three pieces, place them on a plate, and cover with a layer of dry paper towels.
– Then, place something heavy on top, such as a book, a cutting board, or a can of food. Leave it for about 15 minutes to allow the water to drain from the tofu and absorb into the paper towels.
– The cold method involves placing the three cut pieces of tofu on a baking tray lined with parchment paper and putting it in the refrigerator until the tofu becomes firm, then letting it thaw slowly. During the thawing process, the tofu will naturally separate from the water.
– For the heat method, place the whole tofu on a ceramic plate, wrap dry paper towels around it, and cover it with another ceramic plate. Then, microwave for 2-3 minutes. After that, remove the tofu from the microwave, cut it into small pieces, and cook as desired.
Marinating Tofu with Spices
– With this method, simply combine your choice of spices and immerse the tofu in the spice mixture. The tofu will absorb the flavors and taste absolutely delicious.
– When marinating tofu, it is recommended to avoid using too much soy sauce or salt, as the tofu may not absorb the spices optimally.
– Here are some spice combinations to enhance the flavor of tofu:
Recipe 1: 120ml lemon juice, 120ml fresh basil, 1 teaspoon of salt, and 2 cloves of minced garlic.
Recipe 2: 120ml olive oil, 60g nutritional yeast, 2 tablespoons of lemon juice, 1 tablespoon of garlic powder, ½ teaspoon of ginger, and 1 teaspoon of minced garlic.
Recipe 3: ½ Korean green chili, 120ml apple cider vinegar, 120g sugar, 1 teaspoon of salt and pepper, 1 tablespoon of garlic powder, 1 tablespoon of paprika, 1 tablespoon of red pepper powder, and 1 tablespoon of coriander powder.
Recipe 4: 120ml water, 60g Dijon mustard, 60g soy sauce, 60g fresh basil, 2 cloves of minced garlic, and 1 teaspoon of salt and pepper.
– Mix the spices evenly according to the above recipes, then pour them into jars containing cut tofu. Cover and let the tofu marinate for 1-3 hours before cooking or eating.
Choosing the Right Type of Tofu for Your Dish
– Silken tofu is great for making desserts, smoothies, and sauces.
– Vegans can use silken tofu as a substitute for cheese or milk when baking or making sauces.
– Soft tofu is suitable for miso soup, frying without batter, or combining with other ingredients to make a thick soup.
– Slightly firm and firm tofu are best for frying and grilling.
