1. Use Cold Rice from the Previous Day Stored in the Refrigerator

This is the first and most important principle of fried rice. Using cold rice from the refrigerator is essential for achieving the perfect texture. The heat from the pan and soy sauce used when frying the rice will heat up the rice grains and provide the necessary moisture for delicious fried rice.

If you use hot freshly cooked rice, the grains will stick together and result in clumpy and unappetizing fried rice.

2. Fry Rice over High Heat

It is equally important to fry the rice over high heat. Make sure to wait for the pan to get hot before adding the rice. This ensures that the ingredients are quickly heated and each grain of rice is well heated on the inside.

3. Fry Each Ingredient Separately

In fried rice, there are usually many ingredients, such as vegetables or meat/fish. To enhance the flavors of each ingredient, it is best to fry them separately.

Start by frying the meat/fish first until about 80% cooked. Then, transfer it to a separate bowl before adding the rice to fry. When the rice is almost cooked, add the meat/fish back to the pan and fry together until fully cooked.

A common mistake when frying rice is flipping it too much. Avoid constantly flipping the rice as it can cause the grains to break and stick together, resulting in a less fluffy texture.

The final secret to delicious homemade fried rice is to carefully spread the rice in the pan and let it cook for about 1 minute before flipping it. Repeat this process until the rice is evenly cooked to perfection.
