When the black beans are fully cooked and soft, add sugar to taste, let it simmer for a while to let the beans absorb the sweetness, then scoop the dessert into a cup, add some ice, and enjoy.

However, what we often find is that homemade black bean dessert tends to have broken beans and is not as smooth as the one served in restaurants. As a result, the fragrance and richness of the black beans are reduced. The black bean soup becomes cloudy due to the dissolved black bean powder. That’s why experienced dessert sellers reveal a secret: to prevent the beans from breaking while cooking the dessert, an additional ingredient is needed, which is baking soda. Here’s the detailed method:

First, select good quality green beans, preferably those with intact green kernels, and clean them thoroughly.

Put the beans in a pot with water and bring to a boil for about 3 minutes, then drain the water. This step helps remove all the dirt and impurities from the outside of the beans.

Add fresh water to the pot with the black beans, enough water to cook the dessert, then continue to boil. After the water boils, add a little baking soda and let it cook for a while. Then turn off the heat and let the pot of black beans sit until it cools down. This process of cooking the black beans with baking soda helps soften the beans quickly without breaking them.

Once the pot of black beans has finished sitting, turn on the heat again, bring it to a boil, then reduce the heat and simmer for a few more minutes until the beans are soft. When they are ready, pour out most of the black bean soup into a separate bowl. Leave a little bit of the soup in the pot with the beans. Add sugar, stir well, and let the sugar soak into the beans. Let it simmer for 5-7 minutes or until the beans are fully infused with the sweetness.

At this point, add back the black bean soup that was poured out earlier, bring it to a boil, and then turn off the heat.

Note: It is recommended to use brown sugar, yellow sugar, or palm sugar for a more delicious and special flavor.

When serving, scoop the black bean dessert into a bowl or cup, add some ice, and optionally, a little bit of vanilla or banana oil. If desired, you can also add dried coconut, roasted peanuts, or shredded fresh coconut. Alternatively, you can refrigerate the black bean dessert and enjoy it chilled, which is also very appealing!
