Experts recommend that in order to limit bacteria sticking to the chicken’s skin, it is best to rub a little salt into the chicken meat both inside and outside, then rinse it with clean water and dry it before processing it. To avoid cross-contamination of bacteria, clean all surfaces of utensils such as cutting boards, knives with hot soapy water.
