According to Health & Family – The Voice of the Ministry of Health, here are five ways to use monosodium glutamate that you should avoid for the sake of your family’s health.

1 Don’t add MSG to cold food

When MSG is added to cold food, it doesn’t dissolve easily. This takes away from the flavor of the dish and can be harmful. So, if you’re not reheating the food, it’s best to avoid adding MSG.

2 Avoid using MSG in fried foods

Using MSG while cooking at moderate temperatures is generally safe. However, when food is cooked at high temperatures, it can undergo chemical reactions that form harmful sodium and pyroglutamate compounds upon consumption.

Therefore, it’s best to avoid adding MSG to food that is being fried or boiled. The ideal time to season your dish with MSG is after turning off the heat, when the food’s temperature is around 70–90°C (158–194°F).

3 Refrain from using MSG in sour dishes

The acidity in sour dishes can alter the composition of MSG, forming harmful compounds. This chemical reaction can also affect the dish’s flavor, making it less appetizing.

4 Don’t add MSG to sweet dishes

Combining MSG with sweet dishes can make them excessively sweet and unpalatably cloying. Keep this in mind when preparing sweet treats to avoid wasting ingredients.

5 Avoid using MSG in children’s meals

Parents, take note: it’s crucial to avoid MSG in the meals of children under two years old. Their taste buds are still developing, and improper use of MSG can harm their brain development. MSG contains excitotoxins, which are chemicals that can damage the brain and central nervous system.
