Prepare the ingredients: 1 grouper, scallions, ginger, soy sauce, lard, cooking oil.

Step 1: Choose a grouper weighing about 1-2 kg, this size of fish is the most delicious, if the fish is too big, the meat will be tough and the flavor will be worse. Remove all impurities stuck on the scales, fins, and belly of the fish, then rinse multiple times with clean water. Score the fish to help it absorb spices easily.
Step 2: When steaming grouper, remember not to add salt for marinating because the grouper meat itself is very tender, if you add salt, it will make it lose its protein content, the fish will shrink and not taste good. Use cooking wine for marinating and to remove the fishy smell. Then marinate with scallions and ginger for a few minutes.
Step 3: Prepare a large plate, place the scallions and ginger at the bottom of the plate, then place the grouper on top. The important step is to brush a layer of lard on the fish, it will help lock in moisture and prevent the fish from drying out.
Step 4: Put the grouper in a steamer, cover tightly, and steam for about 6-7 minutes from the time the water boils.
Step 5: After steaming, reduce the heat to low for about 1 minute, then open the lid, the fresh aroma will fill the air. At this time, you should also pay attention, when steaming the fish, there will be some dirty water at the bottom of the plate, this water is fishy and needs to be poured out.
Many people don’t know how to tell if the fish is cooked or not, it’s actually very simple. We use chopsticks to poke the part where the meat and fishbone meet, if the meat and fishbone can easily separate, it means the fish is cooked, if they still stick together, it means it’s not cooked yet.
Step 6: Transfer the steamed grouper to a new plate, then sprinkle some finely chopped purple onions and ginger on top of the fish, and drizzle a layer of soy sauce on top.
