How to preserve dry onions
To preserve onions for a long time, the first thing to do is to choose the right type of onion.
You should prioritize choosing firm, large bulbs that are not discolored and have uniform cloves. The outer skin of the onion bulb should be old and dry.
Avoid choosing onions with soft spots or dents in the stem. Onions that have already started to sprout should not be purchased.
Preserving onions in mesh bags
You can put the onions in a mesh bag, paper bag, or basket. It is important to ensure that there is adequate ventilation to keep the onions dry. Then, store the onions in a cool, dry place. Avoid storing the onions in a place that is too cold (below 10 degrees Celsius) or too hot.
Regularly check the onion bag and remove any onions that show signs of rot, softness, or discoloration to prevent mold from spreading to the other bulbs.
Onions should not be stored in plastic bags or sealed containers, as this will impede air circulation and cause moisture to accumulate, leading to rapid spoilage and mold growth.
Preserving peeled onions
For peeled onions, chop them finely and place them in a container or zip-top bag. Store the onions in the refrigerator and use them within 2-3 days.
To extend the storage period, store the onions in the freezer.
Preserving onions by frying
You can process dry onions into fried onions for use in many dishes at home.
Select firm onions that are not soft and peel off the skin. Slice the onions thinly (horizontally or vertically, depending on your preference, but avoid slicing too thinly as the onions will burn quickly).
Sun-dry or air-dry the onions until they wilt.
Place a pan on the stove and add cooking oil to the pan. When the oil is hot, add the onions and stir constantly.
Stir continuously to prevent the onions from burning. When the onions turn a light golden color, they should be removed from the pan immediately. The onions will maintain a high temperature for a period of time and continue to brown more than when they were first removed.
Spread the onions evenly on paper towels and let them cool completely. Place the onions in a jar or container with a lid. Store the onions in the refrigerator and use them gradually. When using, use clean chopsticks/spoons to remove the fried onions. Once removed, close the jar tightly and return it to the refrigerator so that the onions do not lose their aroma or become soggy.
