José Andrés is a renowned Spanish chef currently based in the US. He holds the position of Head of the Spanish Research Department at the International Culinary Center, Manhattan. With his extensive experience and culinary research, Andrés has created numerous delectable dishes and shared valuable cooking insights. One of his most esteemed secrets is his unique technique for frying eggs.
While many consider frying eggs to be a simple and quick breakfast option, Andrés believes otherwise. In an interview with The New York Times, he expressed, “Throughout my life, I have strived to perfect the art of frying eggs.” In 2012, at the International Culinary Center, Andrés introduced a frying method he deemed as accurate and capable of enhancing the taste of this beloved dish.
Andrés’ approach to frying eggs diverges from the conventional methods we commonly employ. Let’s take a closer look at how he does it.
Firstly, Andrés utilizes a flat-bottomed pan and adds 4 tablespoons of olive oil, which he heats over medium-high heat until it reaches boiling point. Meanwhile, Andrés cracks the eggs into a bowl. Once the oil is boiling, he tilts the pan to one side, ensuring all the oil gathers on that side. Subsequently, Andrés pours the eggs into the pan and continuously ladles the hot oil over them. As the cooking process progresses, he flips the whites over the yolks.

After approximately 30 seconds, the eggs are fully cooked. At this point, Andrés removes the eggs from the pan, places them on a plate, and lightly seasons them with salt. This completes the dish.

What difference does Andrés’ egg-frying technique make? As Andrés explained, “An egg ‘swimming’ in hot oil acquires a beautiful brown color on the whites, imparts a unique flavor, and develops a crispy crust.” Moreover, when the fried eggs are sliced in half, the smooth yolk cascades out thanks to being enveloped by the translucent whites during frying. According to Huffington Post, other renowned chefs such as Anthony Bourdain and Eric Ripert also appreciate this method.
