However, many housewives have wondered why their roasted peanuts are not crispy or only stay crispy for a few hours and then become soft and not as delicious. Therefore, the chef pointed out that typically, when you roast peanuts, people often pour them directly into hot oil and roast them. However, this method does not yield high effectiveness for the dish and requires an additional step, which is soaking the peanuts.
After learning this trick, some people have started soaking the peanuts before roasting them. However, whether you soak the peanuts in cold or hot water is crucial as it will determine the quality of the dish.
First, after buying peanuts, remove any bad seeds and then pour them into a large bowl. At this point, pour boiling water into the bowl, stir a few times with chopsticks, and let it soak for 5 minutes.
Soaking the peanuts in boiling water will allow the peanut shells to quickly absorb moisture, making the peanuts more moist but without soaking up too much water on the inside, preventing them from splattering while frying. When roasting, the heat will quickly and evenly heat the peanuts, making the dish crispier. If soaked in cold water, the peanuts will absorb water for a long time, leaving water droplets on the outer layer and causing them to splatter when fried. Therefore, before roasting, you should soak the peanuts in boiling water instead of cold water. Additionally, soaking the peanuts will help clean the impurities on the surface of the peanuts.
After soaking for a while, drain the water well so that when you fry them with oil, the peanuts do not splatter.
Pour an appropriate amount of cooking oil into a pot, heat it up, then add the drained peanuts to fry, covering them completely with oil.
Fry until the peanuts are 80% cooked, then turn off the heat. Do not scoop the peanuts out right away; instead, use the remaining heat in the oil to continue frying them until fully cooked (about 2 more minutes). Then, scoop out the peanuts.
While the peanuts are still hot, add 1 tablespoon of white wine and 1 tablespoon of salt and mix well. Following this method will give the peanuts a fragrant and crispy texture for several days without becoming soft.
