When choosing pork, if the meat has an unusual color, not a light pink, and feels sticky on the outside, oozes liquid, or makes your hands feel sticky, it’s likely old and prone to spoilage, so it’s best to avoid it.

Additionally, steer clear of meat with a slight greenish or purplish tint and a lack of sheen. This indicates that the meat has been stored for too long and has deteriorated, increasing the risk of food poisoning if consumed.

The meat’s structure is separated

Fresh pork should have a cohesive structure where the fat and lean parts are firmly connected. When cutting the meat, it should stand upright without leaning to one side. However, if the pork’s structure appears separated, it’s either old or diseased, and you should refrain from purchasing it. Hence, when shopping for pork, pay attention to the thickness of the fat layer. Pork injected with growth promoters will have a thin fat layer (less than 1 cm). In contrast, naturally raised pork will have a fat layer ranging from 1.5 to 2 cm or, at the very least, 1-1.5 cm.

According to experienced shoppers, the hair roots of healthy pork are pure white. If the hair roots are pink, it indicates that the pork is either sick or has been treated with chemicals, so it’s best to avoid it. Before selecting your pork, pluck a hair or two to test it!

Good-quality pork should be elastic. If the meat lacks elasticity, it’s likely old or from a diseased animal. Moreover, during the cooking process, if the pork emits a pleasant aroma, doesn’t release excessive liquid, and doesn’t smell of antibiotics, it’s safe to consume. Conversely, if it emits a strange or antibiotic odor, discard it immediately to avoid any health risks.

Meat with raised nodules or rice-like grains

Meat exhibiting these characteristics is infested with parasites, and consumption should be avoided. Carefully examine the meat before purchasing, especially in fatty areas like the shoulder, ham, or trotter. If you notice grains resembling glutinous rice, refrain from buying it, as consuming such meat could lead to food poisoning.
