2Cleaning and Removing Eel Slime

Freeze the eels

Place live eels in a plastic bag and seal it tightly. Put the bag in the freezer’s ice-making compartment for about 2 hours. Then, remove them from the freezer, submerge them in water, and gently rub them with a dishcloth to easily wipe away the slime.

Clean the eels with lemon juice

To remove the slime from the eels, scrub them with lemon juice or rice water. Avoid using vinegar, as it will alter the eels’ distinctive flavor. Continue scrubbing until no more slime is visible. Alternatively, you can place the eels in hot water and let them squirm to remove the slime. Once clean, gut the eels, discard the internal organs, and rinse thoroughly with salted water.

Use ash to clean the eels

Place a layer of ash in a basin and put the eels on top. Cover the eels with more ash and gently rub from head to tail. Then, rinse the eels thoroughly with water to remove any remaining ash.

It’s important to note that when cleaning eels, avoid using cold water as it can make them smell fishier. Instead, opt for warm water. With the slime removed, you’re now ready to prepare delicious and nutritious eel dishes for your family.
