Vietnam boasts an impressive variety of mushrooms, including the fragrant straw mushroom, the delicate enoki, and many more. Each type of mushroom has unique characteristics and requires specific storage methods. Explore the following tips on mushroom preservation to enhance your culinary expertise!
1 Storing Straw Mushrooms
To keep straw mushrooms fresh for up to seven days, start by selecting the freshest mushrooms available. Gently wipe the mushrooms with a damp cloth to clean them, then wrap them in a piece of newspaper and store in a dry place.

There are several methods to store straw mushrooms, depending on how long you intend to keep them.
Method 1: Maintain a temperature of 10-15°C to extend the shelf life of straw mushrooms to four days. Simply store them in your refrigerator and use as needed. For longer storage, place the mushrooms in airtight bags before refrigerating.
Method 2: Blanch the mushrooms in boiling water for about two minutes, then immediately plunge them into cold water. Store in the refrigerator, and they will keep for three to four days.
Method 3: Boil the mushrooms for 10-15 minutes in salted water, then transfer them to a cold-water bath. After a brief soak, place the mushrooms in a glass jar and cover them with a 20-23% salt solution. Change the solution if it becomes cloudy or moldy. This method will keep your mushrooms edible for several months.
Method 4: Dry the mushrooms in the sun or an oven set to low heat. When completely dry, store in an airtight container. This method will preserve the mushrooms for six months or more, but remember to periodically sun-dry them to prevent mold.
3 Storing Oyster Mushrooms
To store oyster mushrooms, start by trimming the stems and separating the caps into smaller pieces. Rinse them thoroughly, then blanch in boiling salted water for about 15 seconds. Drain and allow to air dry before transferring to a clean container and freezing for up to one month.
4 Storing Shiitake Mushrooms
To preserve shiitake mushrooms, remove and discard the stems, then peel and slice the caps. Place the sliced mushrooms in a zipper bag, removing as much air as possible before sealing. Finally, store the bag in the freezer, where the mushrooms will remain fresh for about 30 days.
5 Storing Enoki Mushrooms
Enoki mushrooms thrive in cool temperatures of 1-5°C (the temperature of your refrigerator’s chiller compartment). Stored this way, they will stay fresh for up to 45 days. At room temperature, enoki mushrooms will keep for one to three days. However, for the best flavor and texture, it is recommended to use enoki mushrooms soon after purchase.
Now you know how to store a variety of mushrooms to maintain their delicious flavor and nutritional value. Happy cooking!
