Step 1 Prepare the Scallions

Soak the scallions in a solution of diluted brine and a little alum. This helps to whiten and crisp the scallions, and also makes them softer and easier to peel.

After soaking the scallions overnight, cut off the roots and peel off the thin outer layer.

Rinse the scallions thoroughly under running water several times. Make sure to wash them well to avoid any residual alum taste.
