– 500g pork shoulder

Peel and rinse the garlic, and scallions. Finely chop the garlic and scallions, keeping them separate. Gently pound the pork shoulder to tenderize it and cut it into bite-sized pieces.

In a bowl, mix 1 tablespoon each of broth mix, sugar, honey, fish sauce, and oyster sauce. Add 1 tablespoon of cooking oil, the chopped scallions, garlic, and half a teaspoon of ground pepper. Finally, add the pork shoulder and ensure it’s well-coated. Leave the meat to marinate for about 2 hours.
Once the meat has absorbed the flavors, you can grill it over charcoal or in an oven. This traditional Vietnamese marinade is perfect for grilled pork served with broken rice or rice vermicelli.
Alternatively, you can use pork belly instead of shoulder. Simply rinse and cut the pork belly into bite-sized pieces, and marinate them with 1 tablespoon each of broth mix, sugar, and fish sauce. Add half a tablespoon of salt, 1 tablespoon each of oyster sauce and cooking oil, 2 tablespoons of chili sauce, and a third of a teaspoon of ground pepper. Mix well and let it sit for 1-2 hours before skewering and grilling over charcoal or gas stove for an authentic BBQ experience.
