A delicious and healthy Vietnamese salad by Chef Thanh Hue.

Ingredients:

  • Pork ear: 1 piece
  • Shrimp: 8-10 pieces
  • Papaya: 1/2 piece
  • Carrot: 1 piece
  • Green mango: 1 piece
  • Peanuts: a handful
  • Lime, calamansi, chili
  • Scallions, herbs, lemon basil, lemongrass
  • Spices: seasoning powder, sugar, fish sauce

Instructions:

Step 1: Preparation

  • Scrub the pork ear with salt and rinse thoroughly. Bring a pot of water to a boil and blanch the pork ear. Rinse again and set aside to dry.
  • Clean the shrimp and set aside to dry.
  • Peel and grate the papaya, carrot, and green mango. Keep them separate.
  • Wash and finely chop the herbs, lemon basil, and lemongrass. Slice the chili and set everything aside.
  • Peel and slice the scallions. Fry until golden and crisp. Roast the peanuts, peel and set aside.

Step 2: Steam the Shrimp and Pork Ear

Place the pork ear and shrimp in a steamer with lemongrass. Once cooked, peel the shrimp and remove the veins. If you don’t have a steamer, you can use a regular pot for steaming.

Step 3: Pan-fry the Pork Ear

Pan-fry the pork ear until golden and fragrant. This step adds a lot of flavor to the dish. Then, thinly slice the pork ear.

Step 4: Make the Dressing

In a saucepan, heat water and sugar over low heat until the sugar dissolves and the mixture thickens. Add fish sauce and simmer for 2-3 minutes. Allow the mixture to cool. In a separate bowl, mix lime juice with garlic and chili. Finally, combine the two mixtures and adjust seasoning to taste.

Final Step:

In a large bowl, combine the grated papaya, mango, carrot, herbs, chili, fried scallions, and peanuts. Pour the dressing over the salad and toss well. Adjust the seasoning and sweet-sour balance to your taste.
