Preparation:

– 200 grams of beef, 1 egg white, 2 chili peppers, 150 grams of celery (or other vegetables you like), 1 teaspoon of baking soda, suitable amount of cooking oil, soy sauce, 1 small piece of ginger, 2 cloves of garlic, suitable amount of salt, a little water.

Instructions:

First, put the beef in water and wash it several times to remove excess blood. Slice the beef into thin, crosswise pieces for stir-frying. If someone accidentally slices the beef lengthwise, it will be tough when stir-fried.

Put the beef in a bowl, add 1 egg white, a little salt, soy sauce, baking soda, and a little water, mix well with your hands.

Note: The use of egg white and baking soda to marinate the beef is the key to making the meat tender, moist, and not dry when stir-fried, so please remember that!

Cut the celery into sections and rinse well. Chop the garlic, slice the chili peppers, and mince the ginger.

Heat the oil in a pan, stir-fry the beef briefly, then transfer it to a plate.

Leave a little oil in the pan, stir-fry the garlic, chili peppers, and ginger until fragrant. Then add the celery and stir-fry until it’s almost cooked, then add the beef, season with the desired spices, stir-fry until the beef is cooked, and then turn off the heat. Serve the stir-fried beef hot.
