How to Remove the Gamey Odor from Duck Meat
Duck dishes are a familiar delicacy in Vietnamese cuisine. According to traditional medicine, duck meat is also a delicious dish that helps detoxify and clear heat, benefiting human health. Additionally, duck can be prepared in numerous delectable ways, such as boiled duck, roasted duck, duck cooked with sour fruit, or duck cooked with pickled bamboo shoots. However, regardless of the duck dish, it is essential to eliminate the distinctive gamy odor to enhance the flavor.
First, use whole peppercorns (it’s always good to have a bag of these on hand) to rub both the inside and outside of the duck. Then, rinse it clean. Next, cut a few slices of ginger and rub them onto the duck before rinsing it again. Ginger is excellent at neutralizing the duck’s gamy odor and imparting a pleasant aroma during boiling.
If you want to be extra thorough, you can also use white wine, ginger wine, or rice vinegar to wash the duck before giving it a final rinse. This will ensure that any unwanted odors are eliminated.
A Delicious and Tender Way to Boil Duck
Step 1: Start by filling a pot with water and placing it on the stove. Turn on the heat and bring the water to a boil. Meanwhile, peel and rinse the ginger, then crush it. Once the water boils, turn down the heat, and add the duck and ginger to the pot.
Step 2: After 30–45 minutes of boiling (depending on the size of the duck), open the lid and use chopsticks to turn the duck over to ensure even cooking. Cover and continue cooking for another 10–15 minutes. You’ll know it’s ready when the duck’s skin turns from yellow to a brownish-yellow.
Step 3: Checking Doneness
To check if the duck is cooked, poke it with the tip of a chopstick or a sharp knife. If no pink juices run out, it’s ready. Turn off the heat and cut the duck into bite-sized pieces before serving.
Step 4: The Finished Dish
Once the duck is cooked through, remove it from the pot and place it in a colander to drain the excess liquid. Let it rest for 5–10 minutes to cool slightly, then cut it into pieces. Duck tastes fantastic when served with fresh herbs and a spicy fish sauce dip.
