How to Boil Delicious Squid

Step 1: Defrosting

If you have access to fresh squid, you can skip this step.

For frozen squid, do not defrost it for an extended period, and avoid using a microwave. Simply take it out of the freezer, rinse it under the tap for a few minutes, and you’re ready to go.

Step 2: Prepare the boiling water

Boil a pot of water and add lemongrass and chili sauce. Only start adding the squid once the water is at a rolling boil. Add a few squid at a time to maintain the water temperature and ensure better-looking boiled squid. Fresh squid only needs lemongrass and chili sauce to taste delicious; no need for extra spices. You can also cut some kumquats in half and add them to the water for extra crispness.

For smaller squid, as shown in the image, boil for about 3 minutes.

Larger squid, such as squid with eggs or bigger ones, will require slightly more time.

After 3 minutes, remove the squid. Each one should look plump and juicy, with an appealing texture.

Dip the squid in chili sauce, seafood sauce, ginger fish sauce, or a mixture of lime juice, chili, and mustard. It’s also delicious to eat the squid with fresh piper sarmentosum leaves.
