Many homemakers nowadays prefer to buy pre-butchered ducks from the market instead of plucking and preparing the duck themselves. When choosing a pre-butchered duck, it’s important to check the meat’s elasticity; if it has good elasticity, then it’s likely a good choice. On the other hand, if the meat lacks elasticity and has an unusual or unpleasant smell, it’s best to avoid it as the duck may have been butchered a long time ago and the meat won’t be as firm, potentially affecting the taste.

Ingredients for Duck Stewed with Sour Fruit and Taro

– 1kg duck meat

– 10 unripe sour fruits

– 500g taro

– 5 shallots

– Ginger, lemongrass, garlic, Chinese celery, chili

Seasonings: Broth mix, sugar, salt, pepper, cooking oil, fish sauce

Step 1: Prepare the Ingredients

Peel and finely chop the ginger. Peel and mince the garlic and shallots. Clean and chop the lemongrass. Wash and finely chop the Chinese celery. Wash and chop the chili. Peel and clean the sour fruit, and parboil the taro after peeling.

Wash the duck meat with a little salt, then cut a lemon in half and rub it on the duck’s skin to remove any unwanted odors. Rinse the duck again and cut it into bite-sized pieces.

Step 2: Marinate the Duck

Marinate the duck with 2 teaspoons of broth mix, 1 teaspoon of salt, a dash of fish sauce, pepper, and half of the chopped ginger, shallots, garlic, and lemongrass. Let the duck marinate for about 30 minutes to absorb the flavors.

Step 3: Cook the Duck

Heat some cooking oil in a pot, add the remaining chopped ginger, shallots, garlic, and lemongrass, and sauté until fragrant. Then, add the marinated duck and stir-fry until it changes color and becomes slightly dry.

Add enough water to the pot and simmer over low heat until the duck is tender. Next, put in the taro and sour fruit and continue cooking for about 10 minutes. Season with 1 teaspoon of sugar and a little fish sauce. Finally, sprinkle in the Chinese celery and chili, and turn off the heat.
