Instead of boiling eggs with water, try using granulated salt as a replacement. This method enhances the richness of the eggs’ taste. By heating the salt, the heat is transferred to the eggs, cooking them. The result is a crunchier and more flavorful texture. You can prepare a larger batch of eggs and store the remaining ones in salt or in the refrigerator. These eggs will have a slightly salty taste and will stay fresh for a longer period.
Ingredients: 10 eggs, 1kg of salt, 1 star anise, 2 bay leaves, 1 piece of cinnamon, 10g whole pepper.
Instructions:
Step 1: Rinse each egg under running water to remove any dirt from the outer shell. Dry the eggs with a paper towel.
Step 2: Prepare a thick pot and add the salt, star anise, bay leaves, cinnamon, and whole peppercorns.
Step 3: Place the pot on the stove and roast the ingredients over medium heat for 5 minutes.
Step 4: Gently place the eggs in the pot, ensuring they are fully covered by the salt layer. Reduce the heat to low and let them cook for about 10 minutes.
Step 5: Once the eggs and salt form a layer, turn off the heat.
Step 6: Gently tap the eggs to separate them. Allow the salt to cool, then transfer the eggs to a glass jar for storage.
