Selection and storage
– When choosing garlic, you should select those with outer skin sticking well to the garlic bulb, avoid those with loose, non-sticky skin. Especially, avoid garlic cloves that have sprouted green shoots.
– During storage, if your garlic cloves have sprouted, you can still use them by removing the green germ. The green germ contains toxins to the body and also gives a bitter taste when cooking.
– Store garlic in a dry and cool place. Moisture in the air will cause garlic to sprout or rot.
– Sliced garlic can be stored in the refrigerator for up to 5 weeks if you put them in an airtight container; this also applies to peeled garlic.
Cooking
– In cooking recipes, if you see 1 teaspoon of minced garlic, it means 1 medium-sized garlic bulb minced finely; and 1 tablespoon of minced garlic is equivalent to 3 medium-sized garlic bulbs.
– If you want a dish to have a strong garlic flavor, you should mince or crush garlic using a garlic press instead of slicing them.
– There is a thin layer of skin sticking tightly to the core of garlic; if you use a garlic press, you don’t need to remove this thin skin before pressing the garlic.
– When sautéing garlic, it is best to add garlic to the pan when it is not yet hot and let the garlic heat up gradually according to the pan’s temperature; this prevents the garlic from burning – causing a bitter taste to the dish.
– The taste of garlic becomes milder when garlic is cooked in soups, stews; the longer the cooking time, the more pleasant the garlic flavor becomes.
– To reduce the strong garlic smell in salads, dressings, or dipping sauces, you can blanch the peeled garlic in boiling water before mincing or slicing it.
– To completely eliminate garlic odor from your breath effectively, chew a strand of parsley or a coffee bean.
– If your hands are still smelling like garlic after cooking, wash your hands with a little lemon juice; or simply rub your hands on the bottom of a stainless steel spoon under running water for a while, the garlic smell will be completely removed.
