1 squash, some fresh shrimp, 1 piece of tofu, some spring onions

Method
Step 1: Peel and devein the shrimp, rinse well. Use a knife to make a vertical cut along the back of the shrimp to make it more visually appealing when cooked.
Place the shrimp in a large bowl, add half of egg white, half tablespoon of cornstarch, some cooking wine, mix well, marinate for a few minutes.
Step 2: Peel the squash, cut into bite-sized pieces. Cut the tofu into small pieces. Chop the spring onions.
Add water to a pot, bring to a boil, add the shrimp and blanch until the shrimp turns pink, then remove the shrimp.
Add water to another pot, add the squash, bring to a boil, then add the tofu, cook for 2-3 minutes. At this point, add the shrimp, then add 1 tablespoon of salt, some white pepper, some chicken bouillon powder, cook for 1-2 minutes, then turn off the heat. Add spring onions.
Serve the squash soup in a bowl and enjoy.
