Step 1: Separate the strands of miến
Before cooking, identify the portion of miến that will be used. Then separate the strands of miến. This step is to prevent the miến from tangling and to keep the miến smooth and non-clumpy.
Step 2: Soak the miến in cold water
Soak the miến in cold water for 5 to 10 minutes.
Do not use hot water to soak the miến. The miến needs to be soaked in cold water to soften the strands gradually. However, only soak the miến for 5-10 minutes because if soaked for too long, the miến will become soft and lose its natural sweetness.
Step 3: Blanch the miến in boiling water
Before stir-frying, blanch the miến in boiling water to avoid stir-frying the miến directly in oil, as this will cause the miến to not cook evenly and become sticky. Blanch the miến in boiling water quickly, then immediately remove the miến.
Step 4: Soak the blanched miến in ice water
Immediately after blanching, soak the miến in ice water for about 3 to 5 minutes until the miến is completely cooled. Then drain the miến to remove excess water. This step will help cool down the starch that is released during the blanching process, preventing the miến from sticking together.
Step 5: Mix the miến with egg whites
Mix the miến with egg whites to prevent the miến from sticking together. When stir-fried, the miến will separate into individual strands and look visually appealing.
Simple method of stir-frying miến
Ingredients: Dong miến (vermicelli): 0.5kg; Pork or chicken, beef as desired; Vegetables as desired: onion, carrot… Sesame seeds; Mushrooms: 5 pieces; Seasonings: Seasoning powder, soup powder, fish sauce, cooking oil, pepper….
Instructions:
Add cooking oil to the pan, sauté the garlic and shallots until fragrant, then add the meat and stir-fry until cooked.
Next, add the vegetables and stir-fry evenly, season with seasonings to taste.
Add the prepared miến according to the steps mentioned above, and continue to stir-fry gently to avoid breaking the miến. Keep stirring until the miến strands start to firm up, then turn off the heat.
Do not stir-fry for too long, as the miến will become dry and lose its deliciousness. Transfer the miến to a plate, sprinkle with pepper and sesame seeds, and you can decorate with a few sprigs of coriander to make the miến visually appealing.
