Tofu with mushroom sauce

Ingredients:

400g tofu (equivalent to 3 pieces)

50g dried mushrooms

Diluted saltwater

1 dried shallot, 2 garlic cloves, 1 small ginger

Sauce: 1 tablespoon soy sauce, 20ml water, 1 tablespoon vegetarian oyster sauce, 1 tablespoon sugar, 1 tablespoon salt

How to make delicious tofu with mushroom sauce:

Step 1: Cut tofu into long square pieces, not too big or too small. If the tofu is fresh, there is no need to soak, but if the tofu has been stored for a long time, it is recommended to soak it in diluted saltwater for about 15 minutes and then remove.

Step 2: Clean the mushrooms and soak them in warm water for about half an hour. Then rinse and slice them thinly. Keep the soaking water for cooking.

Step 3: Peel and mince the dried shallot and garlic. Slice the ginger thinly. If you have young children who do not like the spicy taste of ginger, you can remove the ginger and not use it.

Step 4: Before cooking, prepare the sauce by mixing 1 tablespoon soy sauce, 20ml water, 1 tablespoon sugar, and 1 tablespoon salt.

Heat the pan, add cooking oil, sauté the shallot, garlic, and ginger until fragrant. Then add the mushrooms and stir-fry. When the mushrooms are cooked, add the prepared sauce, along with the soaking water from the mushrooms. Once the sauce is boiling, add the tofu and season with additional spices if necessary. Simmer the tofu in the sauce for it to absorb the flavors, but avoid cooking for too long. Finally, sprinkle some spring onions or cilantro on top for added fragrance, and serve.

How to make tofu soup with chives

Chives and tofu are both nutritious ingredients for health. When combined, they create a flavorful and refreshing dish. Chives help boost the immune system and reduce coughing. Chive soup is good for both children and adults.

Ingredients:

400g tofu (about 3 pieces)

200g chives. There are different types of chives, if you can find chive flowers, they are more delicious. If not, you can use chive leaves. Chive leaves come in small and large sizes, choose the small ones as they are more fragrant and easier to eat than the thicker leaves.

A small amount of dill

100g minced pork

Dried shallot

Common seasonings: cooking oil, black pepper, seasoning powder, salt, chicken bouillon…

How to make tofu soup with chives

Step 1: Mince the pork separately. Rinse the chives and cut them into 3cm pieces. Clean the dill, remove any wilted leaves, peel the shallot, leaving a layer of skin. Cut the tofu into bite-sized pieces, not too thick or too thin.

Step 2: Clean the deep pan and add cooking oil. Sauté the shallot until fragrant. Leaving the onion skin on makes the shallot more fragrant when sautéed, and the onion skin also has many health benefits. Place the sautéed shallot in a bowl with the minced pork and mix well. Add some seasonings to marinate the pork.

Step 3: Add the pork to the pan and add water to create a sweet broth (adding the pork when the water is boiling yields a sweeter taste but less broth, while adding the pork when the water is cool yields a more flavorful broth). Avoid boiling the pork for too long to prevent it from becoming dry. Once the broth is boiling, add the tofu, chives, and dill. Take the pot off the heat. Taste and adjust the seasonings to suit your family’s taste.

This dish is best served hot with rice. Tofu soup with chives is good for health, especially during the transition from autumn to winter when bacteria proliferate.
